Ab Doogh Khiar (Cold Yogurt Soup)

Makes 4 servings

Prep time: 20 minutes

2 large cucumbers

1 small onion, grated

2 cups plain yogurt, beaten

1 tablespoon fresh mint, finely chopped

1 tablespoon fresh tarragon, finely chopped or 1 teaspoon dried tarragon

1 tablespoon scallions or leek, finely chopped

2 teaspoon salt

1/4 teaspoon freshly ground black pepper

1/4 cup toasted chopped walnuts

1/4 cup raisins

2 cups cold water

few ice cubes

2-3 oz Persian or Pita bread (optional-tear into small pieces)

1) Wash cucumbers and peel. Then grate or finely chop them.

2) In a bowl, stir cucumbers and onion into the yogurt.

3) Add the mint, tarragon, scallions, walnut, raisins, salt and pepper. Mix well together.

4) Stir in water and mix.

5) Adjust seasonings, and just before serving add ice cubes and bread if desired.
